Este blanco de 4 monos está elaborado con Albillo real, la variedad blanca que fue tan popular en los vinos de la corte de Madrid durante el siglo XVI. Se trata de un vino de producción muy limitada tan encantador como singular.

Albillo Real is still a bit of a mystery to me, so it's always good to taste different vintages side by side to compare, as I did this time when the 2021 Albillo Real was poured next to the 2020. They try to minimize the voluptuousness of the grape and produce a wine of more freshness and minerality. This contains the usual old vineyards plus two more plots close to Peña Muñana in Cadalso de los Vidrios. The clusters were cooled down for one to two days and then pressed, and the juice was left to settle before it fermented in barrels, where the wine matured for nine months. It has only 13.5% alcohol and a pH of 3.33 and 5.65 grams of acidity. As I often see, the behavior of Albillo changes widely with the vintage, and in the shorter cycle of 2021, it behaved better than in 2020. It has the character of the grape with the classical bitter twist in the finish. 2,046 bottles produced. It was bottled in August 2022.
