Monovarietal de Tempranillo de Valtiendas (Segovia) elaborado por Óscar Hernando, cocinero y propietario del restaurante Casa Silvano Maracaibo. Destaca por su frescura y buena acidez, aunque también presenta buena estructura gracias a unos marcados taninos redondos.

The 2020 Evolet is a Tempranillo from Valtiendas with 14.5% alcohol and good acidity and freshness, keeping the balance. It fermented with 30% full clusters and indigenous yeasts and matured in used barrels for 10 months and a further six months in an oak vat. 2020 was a very good year despite the difficulties from the pandemic; they harvested into October, and the grapes had ripened thoroughly. The wine has notes of ripe berry fruit and is a classical modern Tempranillo with spices, licorice and a touch of ripe melon. It has a full body with very round and bold tannins and ripe flavors. I tasted from a bottle just after opening it and from one that had been open for 24 hours, and the wine had opened nicely and didn't show any signs of fatigue. He wanted to make a more accessible and fresher wine within the powerful style from the zone, whose wines are not that different from the other reds from the Duero. 7,500 bottles produced. It was bottled in September 2022.
