The NV Solera Fina comes from the botas of Fino that show more finesse and are selected for a longer biological aging under a veil of flor. These wines are produced with Pedro Ximénez grapes and are never fortified. It has 15% natural alcohol, with a pH of 3.3. The wine spent a couple of years in concrete tinajas with flor before it was transferred to the botas. It's supposedly 10 to 12 years of age, but tasted next to other wines, it feels younger and more pungent, with more brine and less nutty and volatile aromas, intense, with yeasty notes and a salty finish. Very elegant and clean. The names are a bit confusing; this is older than the Fino en Rama, and surprisingly enough, even though this was also unfiltered, this seemed cloudier... 25,000 half-liter bottles produced. It was bottled in July 2024.
