Viñedo y elaboración

Descripción
Las uvas pertenecen a un viñedo histórico que se encuentra en un Pazo en Sisán en Ribadumia. Se trata de una ampliación más reciente que el viñedo fundacional del pazo que se utiliza para San Clemente.
Suelo
Limosos con canto rodado de origen aluvial.
Clima
Atlántico.
Vinificación
Fermentación espontánea en fudre de 1500 litros.

Envejecimiento
Crianza de 12 meses, 90% en fudre de 1500 litros de cuarto uso y 10% en barricas de varios usos de 225, 300 y 500 litros.

The Wine Advocate:

The 2021 Pazo da Sinsela was produced with the grapes from the different plots in the property, fermented with indigenous yeasts in 225-, 300- and 500-liter oak barrels, where the wine matured for 12 months. The wines have austerity, and this has 12.7% alcohol and notable acidity and freshness, more about the soil and the granite, representing the Salnés with notable saltiness with high minerality. 4,000 bottles were produced. It was bottled in September 2022.

"We don't want to make immediate wines," says Rodri Méndez, and that's certainly not the case here. Made with fruit from alluvial soils in Ribadumia, with fermentation in older barrels, it has top notes of baking spices, pine resin and lemon verbena and a palate that's typically focused, structured and bone dry, with considerable underlying grip. An impressive first release. 2024-30

This shows subtle aromas of citrus, white flowers and a salty element. The palate is medium- to full-bodied, textural, incisive and well constructed, with neatly packed fruit and a long, nuanced finish. Drink now.
