Como el nombre de este estilo de Jérez indica, su seductor olor es su mayor virtud. Los aromas de frutas deshidratadas, frutos secos y caramelo encuentran un fresco contrapunto en las sutiles notas cítricas. Con una solera de 30 años este oloroso dulce es una maravilla de Jerez cuyo potente carácter y eterno posgusto deja prendado a quien lo cata. Un imprescindible en tu bodega. Tras la fermentación y la clasificación, el vino Palomino se fortifica a 18%, y el Pedro Ximénez a 15.5%. Cada vino entra en una solera, bota de roble americano, para envejecer en contacto con el aire.
Opinión de los críticos
Lovely deep toast, raisin and dried fig aromas. Powerful concentration and a great balance of sweetness with marked freshness on the palate. A marvellously complex wine with an incredible, almost chewy, texture and a long, savoury finish of dried fruit. Such a stellar package from every angle. Bravo!
The NV Matusalem 30 Anos Oloroso VORS used to be sold as Oloroso Dulce, but this category is no more contemplated by the appellation, so technically it will be a Cream, but that’s a category that has some not-so-positive connotations in certain markets. Anyway, it is produced with 75% Palomino and 25% Pedro Ximenez grapes. The solera dates from 1847, and the bottled wine is on average 30 years old. The palate is very sweet, with the Oloroso character fighting hard not to be dominated by the typical flavors of Pedro Ximenez, dry figs, coffee, arrope, and feels low in acidity and quite dense. This could work with soft-paste cheeses or desserts rather than with salty dishes.
