Descripción
El amontillado es un vino que se elabora inicialmente con una crianza biológica bajo velo de flor seguida de una fase oxidativa. Esta combinación hace de cualquier amontillado un vino muy singular, cuya identidad está marcada por la crianza biológica. El de Bodegas Tradición tiene una vejez media de 32 años y es el resultado de la combinación de soleras procedentes de Jerez, El Puerto de Santa María y Sanlúcar de Barrameda, de ahí su carácter único.

The 1/24 lot of the NV Amontillado VORS is from July 2024 (handwritten on the label after the bottle number, 770/2400 in my case). It is a wine of exceptional complexity and elegance, true to the style, combining a biological and oxidative phase of aging, which gives it the best of both worlds. It's subtle and elegant, with great balance, incredible for the old age and the concentration that has given it 21% alcohol and 9.94 grams of acidity that lift it up. It's nutty, volatile, saline and complex, very powerful and pungent, with a very long aftertaste. 2,400 hand-numbered bottles were filled in July 2024.
This 30-year-old Amontillado is certainly the most concentrated and prodigiously scented wine in our Best In Show collection this year, and if you do procure a bottle, it might be best to anticipate tasting it in thimble-like quantities, albeit in the best glasses you can lay your hands on. Even a thimbleful would be an experience. The colour is light walnut, and among the many notes you might find in the aromas are dried apricots and figs, pounded walnuts, linseed, orange zests, saffron and cardamom, as well as hessian and olive oil. The palate is almost painful by dint of its concentration, and it wouldn’t be hard to find another handful of two of allusions here. It’s weighty, too; profound bitter notes play a role in its profile; it seems saline; and on the palate there’s an acidity which surprises, given that the wine in your glass began life as a low-acid Palomino. Can you taste the ghost of flor, too? We felt you can, hidden in the distinctive lick of yeasty umami loitering in the aftertaste.
