El Spécial Cuvée es el sello del estilo Bollinger, objeto de las mayores atenciones. Elaborado a partir de los vinos de las dos últimas vendimias, pero sobre todo de una proporción mayoritaria de vinos de reserva, (una verdadera singularidad en Bollinger), es a la vez un gran vino y la materialización de todos los compromisos cualitativos de la Maison Bollinger. Esta mayoría de vinos de reserva se guardan en parte en mágnum entre 5 y 15 años.
Fue el representante británico de Georges Bollinger quien le sugiere en 1911 el nombre de Special Cuvée, escrito a la inglesa y sin acento. Efectivamente, encontraba la expresión «Brut sin añada» poco apropiada para un champagne de tal sutileza… Más de cien años después, el nombre del champagne emblemático del savoir-faire Bollinger sigue conteniendo toda su historia.

"The NV Brut Special Cuvee opens with elegant, well-delineated aromas of honey, brioche, roasted nuts, orange zest, flowers and peaches, of which appear on the palate in a classy, finessed expression of the house style. This is especially refined and delicious NV Champagne. The Special Cuvee is roughly 60 % Pinot Noir, 25 % Chardonnay and 15 % Pinot Meunier, sourced from a variety of vineyards. Bollinger adds 5-10 % of reserve wines (in this case from 1995 and 1996, aged in magnums) which gives this offering its lovely complexity. The dosage is 7-9 grams per liter."
A rich though youthful golden hue, the NV Champagne Special Cuvée Brut is classic and ripe with lush, rounded, and complex aromas of golden apricot, hazelnut, wet stone, and black cherry. Made with 45% of the wine coming from the 2019 vintage, with 55% reserve wine, it’s full-bodied yet elegant and light on its feet, with a ripe and luxurious feel and just a hint of warmth on the finish. The mousse is refined and rounded. Long on the palate, it's inviting now but will have plenty of life ahead of it if stored property. This exceptional cuvée with its distinctive personality continues to be one of the best entry wines to the range from this house and is a benchmark wine for them.
Lovely density and a fine-bubble texture. Dried apple and apricot with hints of dried flowers. Medium to full body. with medium-rich fruit. Spice, zest and ginger character. Usually 10% in barrel. 60% pinot noir, 25% chardonnay and 15% pinot meunier. About 40% reserve wine kept in magnums. Always really well done. Drink now.
Like its rosé counterpart, the latest release of Bollinger's NV Brut Special Cuvée is showing especially well, bursting from the glass with aromas of honeyed apples, crisp stone fruit, buttery pastry, ripe lemons and fresh walnuts. Medium to full-bodied, fleshy and vinous, with a deep core of beautifully ripe fruit, racy acids and a pillowy mousse, it's a charming, characterful wine that proves that Special Cuvée is firmly back where it belongs.
