Descripción
El nombre de esta gama de San Cobate es un homenaje al antiguo monasterio del siglo XI asentado en la finca de la actual bodega. Bancales del Jalón es por tanto una de sus mejores parcelas, con bancales que ofrecen diferentes orientaciones y suelos en los que crece una Tinto fino de carácter fresco y delicado.

There are three vineyard-designated reds from the property. The 2018 San Cucufate Altos del Viso comes from the higher-altitude vines where there's more limestone in the soil, which gives the wine freshness, acidity and a combination of fruit and chalk. The wine has moderate ripeness and alcohol (14%), while keeping good freshness and integrated acidity. It fermented with some 15% of the stems and indigenous yeasts followed by malolactic in barrel and an élevage of eight to 10 months in used barriques and a further six to eight months in large oak vats. This was my favorite of the three single-vineyard wines from 2018, the one that felt younger and fresher and also less evolved and more elegant. It makes sense that the profile of the wine is like that, having seen the vineyards. 1,203 bottles and 80 magnums were filled in March 2021.
