Descripción
El nombre de esta gama de San Cobate es un homenaje al antiguo monasterio del siglo XI asentado en la finca de la actual bodega. Monasterio es por tanto una de sus mejores parcelas, con bancales que ofrecen diferentes orientaciones y suelos en los que crece una Tinto fino de carácter mineral.

The 2018 San Cucufate Monasterio comes from the plot that names the wine, 1.6 hectares of Tempranillo planted in 1986 at 870 meters in altitude on clay and limestone soils. It fermented with 25% of the stems and indigenous yeasts in stainless steel and matured in the same way as the other two single-vineyard reds: some 10 months in used barrels and a further eight months in a 2,500-liter oak vat. These single-vineyard bottlings from 2018 seem to be evolving quite quickly: the colors are already showing some orange, the noses are developed with tertiary aromas and they have polished palates. 1,209 bottles and 80 magnums produced. It was bottled in March 2021. This wine was produced from the initial vintage, 2016, and the other two single-vineyard ones started in 2018. 2016 feels beautiful and ready to drink now, while the 2017 feels more evolved.
