Precursor de la categoría Brut Nature, Laurent-Perrier Ultra Brut es un vino sin azúcar añadido o 'dosage'. Expresa un champagne en estado puro llamado originalmente "gran vino sin azúcar". Lanzado en 1981, este vino elaborado a partir de una añada especialmente seleccionada por su equilibrio a la cual se le suman uno o dos vinos de reserva de una añada complementaria, supuso una verdadera innovación en el saber hacer de esta casa.

The current NV Ultra Brut is a 52% Chardonnay and 48% Pinot Noir blend that is based on the 2007 vintage; it includes – as always – a reserve of the former Ultra Brut vintage, in this case 2004. In fact, the Ultra Brut is produced only every three years on average and the 2007 base is only the twelfth cuvée since the (1976), which was released in 1989. It is citrus-colored and has some very nice white-golden reflections. Bright and fresh on the intensely-flavored brioche nose, this vibrant, round and mouth-filling Champagne reveals a persistent mineral complexity and structure, along with very elegant and refreshing citrus fruit.
This is very dry and vinous with very fine bubbles that wrap themselves around the wine. It's full with lovely fruit that is subtle and encompassing on the palate. Caressing texture and finish. Some pie crust and dry biscuit undertones here. Also white pepper. The base is 2014 and bone dry. Six years on lees. 55% pinot noir and 45% chardonnay. Bottled in May 2021.
Le brut nature demeure une signature forte de la maison, avec une maîtrise indéniable de l’exercice. Tendu, mais pas austère.
