Descripción
Este tinto, el tope de gama de la bodega, vio la luz con la añada 2014. Un vino de producción limitada procedente de viñas viejas de la finca Santa Bárbara. Marca el debut de la colaboración de la bodega con el enólogo francés Hubert de Boüard, de Chatêau Angélus, en St. Emillion.

The 2015 Símbolo is a field blend from vines ranging from 40 to 60 years in age. It aged for 18 months in new French oak and comes in at 14.3% alcohol. This was bottled about a month before being seen. It was mostly doing rather well, maybe except for the integration of wood. It is, in its youth, fairly drenched in vanilla on the nose. Happily, that got pulled in very quickly. In fact, after 15 minutes I stopped noticing much. It was never as strong on the palate—the mid-palate concentration is very fine.
This rich wine is dense with dark, black fruits and layers of tannins. Wood aging for 18 months still shows in the toasty character, although this will go as the wine ages. This powerful wine will age for many years. Drink from 2020.
